I decided to make:
🌶Jerk Chicken Sushi🌶
INGREDIENTS:
🍗🍗For the jerk chicken:
1 lb boneless chicken thighs
2 tbsp walkerswood wet jerk season
1/2 head cabbage, rough chop
1 onion, rough chop
2 C baby carrots
🌶🌶For the dry seasoning:
2 Tbsp brown sugar
2 t Paprika
1 t Cayenne
1/2 t Cinnamon
1 t Cloves
1 Tbsp Thyme
2 t Allspice
1 t Ginger
1 t Garlic
1 tOnion
1/2 t Black Pepper
2 t Salt
🍚🍚For the sushi rice:
2 cups cooked sushi rice
3 tbsp rice vinegar
1 tbsp sugar
1 tsp salt
🥒🥒For the fillings:
a few sheets of nori
1 ripe mango, thinly sliced
1 small cucumber, julienned
½ avocado, sliced

🥣 Jerk Mayo
2 tbsp mayo
½ tsp jerk seasoning
½ tsp lime juice
Mix and chill until serving
🍴 INSTRUCTIONS:
1. Marinate & Cook the Chicken
Combine all jerk chicken seasonings. Marinate 30 minutes (or overnight for intensity). Roughly chop veggies and set in the bottom of a baking dish. Arrange chicken over top. Seal tightly with foil and Bake for 4 hours at 250°F until fork tender and slightly charred. Slice thin once cooled.
2. Prepare the Rice
Mix vinegar, sugar, and salt; fold gently into warm rice. Let cool slightly.
3. Roll the Sushi
Place nori shiny side down on the mat.Spread rice evenly, leaving 1 inch at the top. Arrange jerk chicken, mango, cucumber, and avocado in the center. Roll tightly, using water to seal the edge. Slice into 8 pieces with a sharp, damp knife.
**For the picture, only scallions were used for the filling**
4. Finish with Magic
Use silicone brush to spread caramelized jerk chicken juices on outer roll. Use a blow torch to add caramelized charred sections on the sushi roll. Sprinkle with lime zest and scallions. Use jerk mayo for drizzling or dipping.
5. Use the cooked veggies for the perfect side dish with your sushi.
